Cook the Sausage

Fresh spinach: Sauté lightly until wilted.
Frozen spinach: Thaw completely and squeeze out excess moisture.
Whisk the Eggs and Milk
In a large bowl, whisk together eggs, milk or cream, salt, and pepper.

Assemble the Casserole
Preheat oven to 350°F (175°C).
Layer cooked sausage and spinach evenly in a greased baking dish.
Sprinkle shredded cheese over the top.
Pour egg mixture evenly across the dish.

Bake
Bake for 35–45 minutes until the center is set and the top is lightly golden.
