Ingredients
  

  • For the Filling
  • 1 lb ground lamb or beef
  • 1 onion diced
  • 2 –3 carrots diced
  • 1 cup peas fresh or frozen
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1 cup beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cloves garlic minced (optional)
  • 1 –2 tablespoons oil for cooking
  • For the Topping
  • 4 cups mashed potatoes prepared
  • 2 tablespoons butter
  • ½ cup shredded cheese optional; cheddar or Parmesan
  • Optional Ingredients
  • Corn or green beans for added vegetables
  • Fresh herbs parsley, rosemary for garnish

Instructions
 

  • Prepare the Meat and Vegetables
  • Heat oil in a skillet over medium heat.
  • Sauté onions, carrots, and garlic until soft and fragrant.
  • Add ground meat and cook until browned.
  • Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  • Thicken the Filling
  • Sprinkle flour over the meat and vegetable mixture, stirring to combine.
  • Slowly add broth, stirring constantly until thickened.
  • Mix in peas and any additional vegetables you desire.
  • Assemble the Shepherd’s Pie
  • Preheat oven to 375°F (190°C).
  • Spoon meat and vegetable filling into a baking dish, spreading evenly.
  • Spread mashed potatoes over the top, using a fork to create texture.
  • Optional: sprinkle shredded cheese on top for a golden crust.
  • Bake
  • Bake for 20–25 minutes or until mashed potatoes are lightly browned and the filling is bubbling.
  • Optional: broil 2–3 minutes for a crispier top.
  • Serve
  • Allow to cool for a few minutes before serving.
  • Garnish with fresh parsley or rosemary.
  • Serve with a simple salad or crusty bread.
