Ingredients
  

Noodles and Sauces

  • 12 pieces lasagna noodles
  • 3 cups marinara sauce Use your favorite brand or homemade.
  • 1 cup béchamel sauce Homemade or store-bought.

Seafood and Cheeses

  • 1 pound medium shrimp, peeled and deveined Fresh or fully thawed if frozen.
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese Reserving some for the top.
  • 1 cup grated Parmesan cheese Reserving some for the top.

Vegetables and Seasonings

  • 2 cups spinach (fresh or frozen) If using frozen, thaw and drain excess water.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to taste Fresh basil or parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil. Add the lasagna noodles and cook until al dente. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add shrimp and cook until they turn pink, about 2-3 minutes. Season with salt and pepper. Remove from heat.

Layering

  • In a mixing bowl, combine the ricotta, half of the mozzarella, and half of the Parmesan cheese. Add the cooked spinach and mix well.
  • In a 9x13 inch baking dish, spread a thin layer of marinara sauce. Place 3 lasagna noodles horizontally across the dish. Spread half of the ricotta mixture on top, then sprinkle on half of the sautéed shrimp. Add another layer of marinara sauce, followed by béchamel sauce.
  • Add another 3 noodles, repeat the cheese and shrimp layers, then add another layer of marinara and béchamel. Place the last 3 noodles on top.
  • Top the last layer of noodles with the remaining marinara sauce, béchamel, and the rest of the mozzarella and Parmesan cheese.

Baking

  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.
  • Allow your shrimp lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil or parsley before serving.

Notes

For the best flavor, use high-quality ingredients. Avoid overcooking the shrimp, as they can become rubbery. Let the dish rest after baking to make slicing easier.
