Ingredients
  

  • For the Chicken:
  • 2 –3 chicken breasts or thighs
  • Salt and pepper to taste
  • For the Rice:
  • 1 cup long-grain rice jasmine or basmati
  • 2 cups chicken broth
  • 2 cloves garlic minced
  • Flavor Boosters:
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tbsp olive oil or butter
  • Optional Add-Ins:
  • 1/2 cup carrots or peas
  • 1 cup spinach
  • 1/4 cup grated parmesan cheese

Instructions
 

  • Lightly grease the slow cooker.
  • Add rice, chicken broth, garlic, lemon juice, zest, and herbs to the slow cooker.
  • Season chicken with salt and pepper and place on top of the rice mixture.
  • Cover and cook on low for 4–5 hours or high for 2–3 hours.
  • Check that rice is tender and liquid is absorbed.
  • Fluff rice, mix gently, and serve warm.

Notes

  • Use long-grain rice to avoid mushy texture.
  • Avoid adding too much liquid.
  • Add delicate herbs at the end for fresher flavor.
  • Add a splash of broth when reheating to keep moisture.
