Ingredients

  • Beef and Vegetables:
  • 2 pounds stew beef or chuck roast cubed
  • 3 carrots peeled and chopped
  • 3 potatoes diced
  • 3 celery stalks sliced
  • 1 large onion chopped
  • 3 garlic cloves minced
  • Broth and Seasonings:
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional Spooky Add-Ons:
  • Black beans
  • Dark mushrooms
  • Purple carrots
  • Tri-color potatoes
  • Optional Thickener:
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  • Prepare the Ingredients:
  • Cube the beef, chop the vegetables, and mince the garlic. Try to keep all vegetables about the same size for even cooking.
  • Brown the Beef (Optional):
  • For extra flavor, sear the beef in a skillet with a little oil until browned on all sides. This step is optional but adds depth to the stew.
  • Layer in the Slow Cooker:
  • Place the beef in the bottom of the slow cooker. Add chopped vegetables, garlic, tomato paste, and all seasonings. Pour in the beef broth and Worcestershire sauce. Stir gently to combine.
  • Cook Low and Slow:
  • Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until beef is fork-tender and vegetables are soft.
  • Thicken the Stew (Optional):
  • If a thicker stew is desired, mix cornstarch with water to create a slurry. Stir into the stew during the final 30 minutes of cooking.
  • Final Touches and Serve:
  • Taste and adjust seasoning. Remove bay leaves before serving. Garnish with fresh parsley or a sprinkle of paprika. For a spooky presentation, serve in black bowls or mini cauldrons.

Notes

• Use marbled beef for the best flavor and texture.
• Searing the meat before slow cooking enhances richness.
• Add delicate vegetables like peas near the end to avoid overcooking.
• For a spicier version, include chili flakes or hot sauce.
• Pairs well with crusty bread, mashed potatoes, or over egg noodles.
