Ingredients

  • 1 egg
  • 1/2 cup mango puree fresh or canned
  • 1 teaspoon vanilla extract
  • Yellow or orange food coloring optional
  • For coating:
  • 1/4 cup granulated sugar
  • 1/2 cup powdered sugar

Instructions
 

  • Mix dry ingredients:
  • In a bowl, combine flour, baking powder, and salt. Set aside.
  • Cream butter and sugar:
  • In another bowl, beat butter and sugar until light and fluffy.
  • Add wet ingredients:
  • Mix in egg, mango puree, and vanilla extract. Add food coloring if desired.
  • Combine and chill:
  • Gradually add dry ingredients and mix until a soft dough forms. Chill for at least 1 hour.
  • Shape and coat:
  • Scoop dough into small balls. Roll in granulated sugar, then coat generously in powdered sugar.
  • Bake:
  • Preheat oven to 350°F (175°C). Place cookies on a lined baking sheet and bake for 10–12 minutes until crinkled and set.
  • Cool and serve:
  • Let cool slightly before serving.
