  • 2 cups cooked chicken (shredded or diced) You can use rotisserie chicken for convenience.
  • 1 ripe avocado (diced) Use immediately to avoid browning.
  • 1 cup cherry tomatoes (halved)
  • 1 bell pepper (diced, any color)
  • 1 small red onion (finely chopped)
  • 1 cup corn (frozen or fresh, cooked)
  • 1 can black beans (drained and rinsed)

Spices and Seasoning

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime Prevents avocado from browning.
  • Fresh cilantro (chopped, for garnish)

Preparation

  • In a large mixing bowl, combine the cooked chicken, avocado, cherry tomatoes, bell pepper, red onion, corn, and black beans.
  • Sprinkle cumin, chili powder, salt, and pepper over the mixture. Drizzle the fresh lime juice on top.
  • Using a spatula, gently toss the salad to combine all ingredients while being careful not to mash the avocado.
  • Transfer to a serving bowl and sprinkle chopped cilantro on top for a fresh finish.

Notes

Use fresh ingredients for the best flavor. Customize to your taste by adding jalapeƱos or nuts. This salad can be made ahead; keep avocado separate until serving.
