  • 2 cups cooked, shredded chicken (grilled or roasted) For enhanced flavor, opt for grilled chicken.
  • 1 cup fresh sweet corn (canned, frozen, or grilled)
  • 1 large cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped

Dressing Ingredients

  • 1 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise Adjust to taste for creaminess.
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the chicken if not already cooked, and shred it.
  • If using fresh corn, boil or grill until tender or thaw frozen corn.
  • In a large mixing bowl, combine the diced cucumber, cooked corn, red onion, and jalapeƱo (if using).

Dressing

  • In a separate bowl, whisk together Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper.
  • Adjust seasoning based on your preference.

Assembly

  • Add the chicken and dressing to the vegetable mixture. Stir gently until well coated.
  • Fold in the crumbled feta cheese and fresh cilantro.
  • Let the salad chill in the fridge for at least 30 minutes before serving.

Notes

For extra crunch, consider adding crushed tortilla chips on top before serving. Use grilled chicken for smokier flavor.
