Ingredients
  

Marinade Ingredients

  • 3/4 cup light coconut milk (divided) Set aside a portion for later use.
  • 1/2 cup sweet chili sauce Plus more for dipping.
  • 1 unit lime Juice and zest will be used.
  • Salt and pepper To taste.

Main Ingredients

  • 4 pieces chicken breasts (~2lbs) Boneless and skinless.
  • 8 cups cauliflower rice (fresh or frozen) Serves as a healthy side.
  • 1.5 Tablespoons coconut oil For stir-frying the cauliflower rice.
  • 1/4 cup fresh cilantro (chopped) For garnish.

Instructions
 

Marination

  • In a bowl, combine 1/2 cup of light coconut milk, sweet chili sauce, and lime juice. Season with salt and pepper.
  • Add the chicken breasts, ensuring they are well coated. Cover and let marinate for at least 30 minutes, up to 2 hours.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove chicken from marinade (discard leftover marinade) and place on the grill.
  • Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C).

Cauliflower Rice Preparation

  • In a skillet, heat coconut oil over medium heat.
  • Add cauliflower rice and stir-fry for 5-7 minutes until tender. Season with salt and pepper.

Serving

  • Once grilled, let chicken rest for a few minutes before slicing.
  • Serve over cauliflower rice, topped with fresh cilantro and additional sweet chili sauce.

Notes

For best results, choose quality chicken and don’t rush the marinating process. Letting the chicken rest after grilling retains its juices.
