Casserole Base

  • 2 cans 15-ounce cans whole kernel corn, drained
  • 1 can 14.75-ounce can cream-style corn
  • 1 package 8-ounce package cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted (for casserole)
  • 1 large egg, beaten
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup grated sharp cheddar or Monterey Jack cheese

Honey Glaze

  • 1/4 cup unsalted butter, melted (for topping)
  • 1/2 cup honey
  • 2 tablespoons unsalted butter (for glaze)
  • 1 tablespoon water
  • 1 pinch sea salt (for glaze)

Garnish (optional)

  • Fresh chives, chopped
  • Fresh thyme or parsley sprig

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the drained whole kernel corn, cream-style corn, softened cream cheese, sour cream, and melted butter. Stir until smooth.
  • Add in the beaten egg, sugar, vanilla extract, sea salt, and black pepper. Mix until all ingredients are well incorporated.
  • Stir in the panko breadcrumbs and grated cheese, blending them into the mixture.
  • Transfer the mixture into a greased 9×13-inch baking dish, smoothing out the top.

Glazing

  • In a small saucepan over low heat, combine honey, melted butter, water, and a pinch of sea salt. Stir until well combined and warmed through.
  • Drizzle the honey glaze over the casserole before placing it in the oven.

Baking

  • Bake the casserole for about 45-50 minutes or until set and golden brown on top.
  • Let it cool for a few minutes, then garnish with fresh chives or a sprig of thyme.

Notes

Avoid overmixing to prevent a dense texture, and monitor baking time as ovens may vary. Apply the honey glaze just before baking to avoid burning.
