- 2 cups cooked chicken shredded or sliced
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1 red bell pepper thinly sliced
- Peanut Dressing:
- ¼ cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon ginger
- 1 clove garlic minced
- 2 –4 tablespoons warm water
- Optional:
- Chopped peanuts
- Cilantro or green onions
- Sesame seeds
Prepare chicken and slice all vegetables.
In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, garlic, and warm water until smooth.
In a large bowl, combine cabbage, carrots, bell pepper, and chicken.
Pour dressing over the salad.
Toss until everything is evenly coated.
Let sit for 5–10 minutes for flavors to blend.
Top with peanuts, cilantro, or sesame seeds if desired.
Serve chilled or at room temperature.
