Ingredients
  

  • 2 cups cooked chicken shredded or sliced
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper thinly sliced
  • Peanut Dressing:
  • ¼ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon ginger
  • 1 clove garlic minced
  • 2 –4 tablespoons warm water
  • Optional:
  • Chopped peanuts
  • Cilantro or green onions
  • Sesame seeds

Instructions
 

  • Prepare chicken and slice all vegetables.
  • In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, garlic, and warm water until smooth.
  • In a large bowl, combine cabbage, carrots, bell pepper, and chicken.
  • Pour dressing over the salad.
  • Toss until everything is evenly coated.
  • Let sit for 5–10 minutes for flavors to blend.
  • Top with peanuts, cilantro, or sesame seeds if desired.
  • Serve chilled or at room temperature.

Notes

  • Add warm water gradually to adjust dressing consistency.
  • Toss just before serving to keep vegetables crisp.
  • Store in the fridge for up to 3 days.
  • Keep dressing separate if meal prepping ahead.
  • Not suitable for freezing.
