Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 tbsp granulated sugar for dough
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup water
  • Nonstick cooking spray
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

  • In a medium saucepan, combine water, butter, 1 tbsp sugar, and salt. Heat over medium until the butter is melted and the mixture begins to simmer.
  • Add flour all at once and stir vigorously until a dough ball forms and pulls away from the sides of the pan.
  • Let the dough cool slightly. Then beat in the eggs one at a time, followed by vanilla extract, mixing until smooth.
  • Transfer dough to a piping bag fitted with a star tip (or a zip-top bag with the corner snipped).
  • Pipe small bite-sized portions onto parchment paper.
  • Preheat air fryer to 375°F. Transfer churro bites to the basket, spray with nonstick spray, and air fry for 8–10 minutes or until golden and crisp.
  • While warm, toss churro bites in the cinnamon sugar mixture until fully coated. Serve immediately!

Notes

  • Dough can be made ahead and refrigerated up to 24 hours. Bring to room temp before air frying.
  • Flip bites halfway during air frying for even browning.
  • Try dipping in chocolate or caramel for extra indulgence.
  • For a twist, mix nutmeg or pumpkin spice into the sugar coating.
  • To reheat, air fry leftovers at 350°F for 3 minutes to restore crispness.
