Ingredients
  

  • Ground beef
  • Taco seasoning
  • Onion chopped
  • Garlic minced
  • Salsa
  • Black beans drained and rinsed
  • Corn fresh, canned, or frozen
  • Flour or corn tortillas
  • Shredded cheddar cheese
  • Shredded Monterey Jack cheese
  • Sour cream optional, for serving
  • Fresh cilantro optional, for garnish

Instructions
 

  • In a skillet, cook ground beef with chopped onion and minced garlic until browned; drain excess fat.
  • Stir in taco seasoning, salsa, black beans, and corn. Simmer for 5 minutes to blend flavors.
  • Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish.
  • Spread a thin layer of the meat mixture on the bottom of the dish. Add a layer of tortillas.
  • Top with more meat mixture and a sprinkle of cheddar and Monterey Jack cheese.
  • Repeat layers, ending with a generous layer of cheese on top.
  • Bake uncovered for 25–30 minutes until the cheese is bubbly and golden.
  • Let rest 5–10 minutes before slicing and serving. Garnish with sour cream and cilantro if desired.

  • Use ground turkey or shredded chicken instead of beef for a lighter version.
  • Make it vegetarian by skipping the meat and using more beans and veggies.
