- 12 oz cheese tortellini
- 1 cup cherry tomatoes halved
- 1 cucumber chopped
- ½ red onion thinly sliced
- ½ cup black olives sliced
- ½ cup mozzarella balls or cubes
- ¼ cup fresh basil chopped
- Dressing
- ⅓ cup Italian dressing
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and black pepper to taste
Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
In a large bowl, combine cooled tortellini, cherry tomatoes, cucumber, red onion, olives, mozzarella, and basil.
In a small bowl, mix Italian dressing, olive oil, lemon juice, salt, and pepper.
