- Main Ingredients
- 1 lb 450 g lean ground turkey
- 2 cups elbow macaroni or your preferred pasta
- 1 small onion diced
- 2 –3 garlic cloves minced
- 1 cup tomato sauce or diced tomatoes
- 2 cups chicken broth
- 1 –2 cups shredded cheddar or Mexican blend cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional Add-Ins & Toppings
- 1 cup cooked beans black or kidney
- ½ cup corn
- 1 –2 jalapeños diced
- Sour cream
- Green onions chopped
- Cilantro chopped
- Crushed tortilla chips
- Hot sauce
Sauté Aromatics
Heat a little oil in a large pot over medium heat.
Cook diced onion and garlic until softened and fragrant.
Brown the Turkey
Add ground turkey and cook, breaking it apart, until fully browned.
Add Spices and Tomatoes
Stir in chili powder, cumin, paprika, and salt.
Mix well, then add tomato sauce or diced tomatoes. Let simmer 2–3 minutes.
Add Pasta and Broth
Pour in chicken broth and stir in pasta.
Bring to a simmer and cook until pasta is tender and most liquid is absorbed (about 10–12 minutes).
Mix in Cheese
Remove from heat and stir in shredded cheese until melted and creamy.
Adjust seasoning if needed.
Serve and Garnish
Top with optional sour cream, green onions, cilantro, jalapeños, or crushed tortilla chips.
Serve warm and enjoy!
