Ingredients
  

  • Main Ingredients
  • 1 lb 450 g lean ground turkey
  • 2 cups elbow macaroni or your preferred pasta
  • 1 small onion diced
  • 2 –3 garlic cloves minced
  • 1 cup tomato sauce or diced tomatoes
  • 2 cups chicken broth
  • 1 –2 cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional Add-Ins & Toppings
  • 1 cup cooked beans black or kidney
  • ½ cup corn
  • 1 –2 jalapeños diced
  • Sour cream
  • Green onions chopped
  • Cilantro chopped
  • Crushed tortilla chips
  • Hot sauce

Instructions
 

  • Sauté Aromatics
  • Heat a little oil in a large pot over medium heat.
  • Cook diced onion and garlic until softened and fragrant.
  • Brown the Turkey
  • Add ground turkey and cook, breaking it apart, until fully browned.
  • Add Spices and Tomatoes
  • Stir in chili powder, cumin, paprika, and salt.
  • Mix well, then add tomato sauce or diced tomatoes. Let simmer 2–3 minutes.
  • Add Pasta and Broth
  • Pour in chicken broth and stir in pasta.
  • Bring to a simmer and cook until pasta is tender and most liquid is absorbed (about 10–12 minutes).
  • Mix in Cheese
  • Remove from heat and stir in shredded cheese until melted and creamy.
  • Adjust seasoning if needed.
  • Serve and Garnish
  • Top with optional sour cream, green onions, cilantro, jalapeños, or crushed tortilla chips.
  • Serve warm and enjoy!

Notes

  • Cheese: Add off the heat to prevent clumping or graininess.
  • Spices: Blooming chili powder and cumin in oil enhances flavor.
  • Consistency: If sauce is too thick, add a splash of broth or milk.
