Ingredients
  

Cucumbers

  • 2-3 medium-sized Cucumbers, thinly sliced Choose fresh, firm cucumbers for the best flavor.
  • 1 teaspoon Salt For tossing and sweating the cucumbers.

Creamy Dressing

  • ½ cup Mayonnaise
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sugar

Toppings

  • 2 Green onions, chopped
  • 1 tablespoon Sesame seeds, toasted
  • Chili flakes Optional, for an added kick.

Preparation

  • Slice the cucumbers thinly and place them in a mixing bowl. Sprinkle the salt over them and let them sit for about 10-15 minutes.

Make the Creamy Dressing

  • In a separate bowl, whisk together the mayonnaise, rice vinegar, soy sauce, sesame oil, and sugar until smooth.

Combine Everything

  • Once the cucumbers have sweated, gently pat them dry with a paper towel. In your mixing bowl, combine the drained cucumbers, creamy dressing, chopped green onions, and sesame seeds.

Toss and Chill

  • Toss everything together thoroughly until the cucumbers are evenly coated with the dressing. Let the salad chill in the refrigerator for at least 30 minutes before serving.

Serve

  • When you’re ready to serve, give the salad a quick toss again, sprinkle with additional sesame seeds or chili flakes if desired, and enjoy.

Notes

Make ahead of time for gatherings, but add green onions just before serving for freshness. Consider adding shredded rotisserie chicken or tofu for extra protein.
