- 2 eggs beaten
- ½ cup almond flour or breadcrumbs panko or keto-friendly substitutes
- ¼ cup grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Cooking spray or olive oil for baking/air frying
- Dipping sauce of choice e.g., marinara, ranch, garlic aioli – optional
Preheat oven to 425°F (or air fryer to 400°F). Line a baking sheet with parchment or lightly spray the air fryer basket.
Slice zucchini into uniform sticks about 3–4 inches long.
In one bowl, beat the eggs. In another, combine almond flour or breadcrumbs with Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Dip each zucchini stick into the egg, then dredge in the crumb mixture, pressing gently to adhere.
Arrange fries in a single layer on the baking sheet or in the air fryer basket without crowding.
Lightly spray with oil. Bake for 20–25 minutes (or air fry for 10–12 minutes), flipping halfway, until golden and crispy.
