Ingredients

  • 2 medium fresh zucchinis sliced into fry-sized sticks (3–4 inches long)
  • 2 eggs beaten
  • ½ cup almond flour or breadcrumbs panko or keto-friendly substitutes
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Cooking spray or olive oil for baking/air frying
  • Dipping sauce of choice e.g., marinara, ranch, garlic aioli – optional

Instructions

  • Preheat oven to 425°F (or air fryer to 400°F). Line a baking sheet with parchment or lightly spray the air fryer basket.
  • Slice zucchini into uniform sticks about 3–4 inches long.
  • In one bowl, beat the eggs. In another, combine almond flour or breadcrumbs with Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Dip each zucchini stick into the egg, then dredge in the crumb mixture, pressing gently to adhere.
  • Arrange fries in a single layer on the baking sheet or in the air fryer basket without crowding.
  • Lightly spray with oil. Bake for 20–25 minutes (or air fry for 10–12 minutes), flipping halfway, until golden and crispy.
  • Serve immediately with your favorite dipping sauce.

Notes

  • Pat zucchini dry before breading for better crispiness.
  • Add smoked paprika or chili powder for a spicy twist.
  • Nutritional yeast can replace Parmesan for a dairy-free option.
  • Spiralize or slice zucchini into chips for fun variations.
