Ingredients
  

For the potatoes

  • 2 large large baking potatoes Russet potatoes are preferred for their fluffy texture.

For the feta mixture

  • 200 g block of feta cheese Use high-quality feta for best results.
  • 2 tbsp olive oil Extra virgin olive oil is recommended.
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic Top cut off to roast.
  • 1 1 lemon Quartered for squeezing juice.
  • 1 tbsp honey
  • to taste Fresh basil for garnish Use fresh basil leaves for garnishing.

Instructions
 

Preparation

  • Preheat your oven to 200°C (400°F).
  • Scrub the baking potatoes clean and poke several holes into them using a fork.
  • Place the potatoes directly on an oven rack or on a baking sheet lined with parchment paper and bake for about 45-60 minutes, or until they are fork-tender.

Feta and Garlic Preparation

  • While the potatoes are baking, prepare a baking dish for the feta. Place the feta cheese, garlic head, thyme, oregano, and olive oil in the dish.
  • When the potatoes are halfway through cooking, place the baking dish with the feta cheese and garlic into the oven.
  • Bake everything together for about 25 minutes until the feta is soft and beginning to brown.

Combine Ingredients

  • Once the feta is ready, remove it from the oven. Squeeze the roasted garlic out of its skin and mash it into the melted feta. Drizzle the honey over the mixture and add a squeeze of lemon juice.
  • Remove the baked potatoes from the oven, slice them open, and spoon the baked feta mixture over the top.
  • Garnish with fresh basil leaves and serve hot.

Notes

Consider adding crushed red pepper flakes to the feta mixture for extra heat. Store leftovers in an airtight container in the fridge for up to three days.
