Ingredients
  

Falafel Ingredients

  • 1 cup dried chickpeas Soaked overnight in water.
  • 1 small onion, chopped
  • 2-3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • to taste salt and pepper
  • as needed Oil for frying Make sure the oil is heated to 350°F (175°C).

Preparation

  • Soak the chickpeas in water for at least 8 hours or overnight.
  • Drain the soaked chickpeas and add them to a food processor with the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse.
  • Scoop the mixture into your hands and form small balls or patties about 1-2 inches in diameter.

Cooking

  • Heat oil in a deep skillet to 350°F (175°C) and carefully fry the falafel in batches for 4-5 minutes until golden brown.
  • Transfer cooked falafel to a paper towel-lined plate to drain excess oil.

Serving

  • Serve falafel tucked into a pita with veggies and tahini sauce, or over a salad with dressing.

Notes

Avoid using canned chickpeas for the best texture. Experiment with different herbs according to your taste.
