These easy grilled steak and potato kabobs are juicy, hearty, and packed with smoky flavor. Made with tender steak and crispy potatoes, this simple kabob recipe is perfect for BBQs, weeknight dinners, or outdoor grilling.

- For the kabobs:
- 1½ lbs steak sirloin or ribeye, cut into cubes
- 1 lb baby potatoes halved
- 1 tablespoon olive oil
- Salt and black pepper
- For seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried herbs rosemary or thyme
- Optional additions:
- Bell peppers
- Red onions
- Mushrooms
Bring a pot of water to a boil and cook the potatoes for 8–10 minutes until just tender. Drain and let cool slightly.
Cut the steak into evenly sized cubes and pat dry.
Toss steak and potatoes with olive oil, garlic powder, paprika, dried herbs, salt, and pepper.
Thread steak and potatoes onto skewers, alternating pieces and adding vegetables if desired.
Preheat the grill to medium-high heat and lightly oil the grates.
Grill the kabobs for 10–12 minutes, turning occasionally, until steak reaches desired doneness and potatoes are lightly crispy.
Remove from the grill, let rest briefly, and serve hot.
