Ingredients
  

  • * 4 cups romaine lettuce chopped
  • * 2 cups cabbage shredded
  • * 1 cucumber diced
  • * 1 cup broccoli finely chopped
  • * ½ cup green onions sliced
  • * ½ cup mayonnaise or Greek yogurt
  • * ¼ cup fresh basil
  • * ¼ cup fresh parsley
  • * 2 tablespoons chives
  • * 1 tablespoon lemon juice
  • * 1 tablespoon olive oil
  • * 1 clove garlic
  • * 2 tablespoons parmesan cheese
  • * Salt and pepper to taste
  • * Optional: avocado nuts, seeds, protein (chicken, tofu, chickpeas)

Instructions
 

  • Wash, dry, and finely chop all vegetables.
  • Add lettuce, cabbage, cucumber, broccoli, and green onions to a large bowl.
  • In a blender, combine mayonnaise or yogurt, basil, parsley, chives, lemon juice, olive oil, garlic, parmesan, salt, and pepper.
  • Blend until smooth and creamy.
  • Pour dressing over the salad.
  • Toss thoroughly until evenly coated.
  • Add optional toppings if desired.
  • Taste and adjust seasoning.
  • Let sit for a few minutes, then serve.

Notes

  • Dry vegetables well to prevent a watery salad.
  • Add dressing gradually to avoid overdressing.
  • Use fresh herbs for the best flavor.
  • Adjust consistency with water or lemon juice if needed.
