  • 2 whole whole wheat tortillas
  • 8 oz cooked turkey, sliced
  • ¼ cup basil pesto
  • 1 cup mozzarella cheese, shredded
  • 1 cup fresh spinach (optional) can be omitted or substituted

Preparation

  • Begin by laying a tortilla flat on your cutting board. Spread a generous layer of basil pesto over the entire surface, right to the edges.
  • On top of the pesto, distribute the sliced turkey evenly. Sprinkle the shredded mozzarella cheese and add the fresh spinach if you’re using it. Season with a pinch of salt and pepper.
  • Starting from one end, carefully roll the tortilla into a tight log. Slice it into 1-inch thick pinwheels and repeat with the second tortilla.
  • If serving immediately, arrange the pinwheels on a platter. If making ahead, wrap them in plastic wrap and store in the fridge for up to 24 hours.

Notes

For a flavorful twist, try different flavored tortillas or add additional ingredients like roasted red peppers or artichokes. Serve with a light dipping sauce for enhanced flavor.
