Ingredients
- 1 lb ground beef
- 1 cup uncooked white or jasmine rice
- 2 ½ cups beef broth
- 4 cloves garlic minced
- 1 small onion chopped
- 2 tablespoons butter
- 1 to 1 ½ cups shredded cheddar cheese or cheese blend
- Salt and pepper to taste
- Fresh parsley chopped (optional, for garnish)
Instructions
- In a large skillet over medium heat, melt the butter. Add chopped onion and minced garlic. Sauté until soft and fragrant.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Season with salt and pepper.
- Stir in the uncooked rice and let it toast for 1 minute with the beef.
- Pour in the beef broth. Bring to a simmer, then cover and reduce heat to low.
- Cook for 15–18 minutes, or until the rice is tender and broth is fully absorbed.
- Remove from heat and stir in shredded cheese until melted and creamy.
- Garnish with parsley and serve warm.
Notes
- Swap ground beef for ground turkey or chicken for a lighter option.
- Add vegetables like bell peppers or mushrooms to boost nutrition.
- For a spicy version, use pepper jack cheese or add red pepper flakes.
- Store leftovers in the fridge up to 4 days or freeze for up to 2 months.
- Reheat with a splash of broth to keep the rice moist and creamy.
